In a small bowl, combine all herbs and seasonings. In a medium saucepan, heat oil and sage for 5-8 minutes then remove to cool. Once cooled, in a large bowl, mix together potatoes, oil, seasonings, and mix well. Spread potatoes evenly on baking sheet and bake for 30 minutes. Halfway through, mix potatoes.
