Apple Walnut Caesar Salad
Ingredients
Dressing
- 2 cloves Garlic minced
- 1 tsp Anchovy Paste
- 2 tbsp Freshly Squeezed Lemon Juice
- 1 tsp Dijon Mustard
- 1 tsp Worcestershire Sauce
- 1 cup Mayonnaise
- ½ cup Parmigiano-Reggiano grated
- ¼ tsp Salt
- ¼ tsp Black Pepper
Salad
- 1 ½ cups Walnut Halves raw
- 8 cups Romaine Lettuce
- 2 small Apples cut into chunks
- Parmigiano-Reggiano shaved
Instructions
Salad
- Preheat the oven to 350°F and add the walnuts to a baking sheet. Toast them for 5-10 minutes until lightly browned and fragrant. Let them cool while you prepare the rest of the salad.
- In a large serving bowl, add the chopped romaine lettuce followed by the apple chunks. When the walnuts have cooled, add them as well.
Dressing
- In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce. Add the mayonnaise, Parmigiano-Reggiano, salt and pepper and whisk until well combined. Taste and adjust to your liking. The dressing will keep well in the fridge for about a week.
