Apple Walnut Caesar Salad

Apple Walnut Caesar Salad

Ingredients
  

Dressing

  • 2 cloves Garlic minced
  • 1 tsp Anchovy Paste
  • 2 tbsp Freshly Squeezed Lemon Juice
  • 1 tsp Dijon Mustard
  • 1 tsp Worcestershire Sauce
  • 1 cup Mayonnaise
  • ½ cup Parmigiano-Reggiano grated
  • ¼ tsp Salt
  • ¼ tsp Black Pepper

Salad

  • 1 ½ cups Walnut Halves raw
  • 8 cups Romaine Lettuce
  • 2 small Apples cut into chunks
  • Parmigiano-Reggiano shaved

Instructions
 

Salad

  • Preheat the oven to 350°F and add the walnuts to a baking sheet. Toast them for 5-10 minutes until lightly browned and fragrant. Let them cool while you prepare the rest of the salad.
  • In a large serving bowl, add the chopped romaine lettuce followed by the apple chunks. When the walnuts have cooled, add them as well.

Dressing

  • In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce. Add the mayonnaise, Parmigiano-Reggiano, salt and pepper and whisk until well combined. Taste and adjust to your liking. The dressing will keep well in the fridge for about a week.
