Candied Pecan Stuffed Sweet Potato

Candied Pecan Sweet Potato Boat

Ingredients
  

Sweet Potato

  • 2 tbsp Sugar
  • 2 tbsp Brown Sugar
  • 2 tbsp Butter
  • 1 tsp Cinnamon
  • ¼ tsp Vanilla Extract

Candied Pecan

  • 2 cup Pecan Halves
  • 1/4 cup Brown Sugar
  • 4 tbsp Butter

Instructions
 

  • Preheat oven to 400℉.
  • Place sweet potatoes on a cookie sheet and bake for 1 hour.
  • With 20 minutes left in baking, lets make our candied pecans.
  • Use a medium sauce pot over medium low heat. Add in butter to begin melting. Once butter is melted, pour in brown sugar stir until well combined. Add in pecans and stir to coat completely. Cook, stirring frequently for 8 minutes until toasted. Scrape onto parchment paper and let cool.
  • Remove sweet potatoes from oven. Using a knife and spoon, carve out the inside of the potato to look like a canoe. Place potato filling in large mixing bowl. Add in brown sugar, sugar, melted butter, cinnamon, and 3/4 of candied pecans. Mix well.
  • Stuff each potato canoe with filling. Gently top filling with remaining candied pecans. Place back into oven for 10-15 minutes just to warm.
  • Remove from oven and enjoy!
