Candied Pecan Sweet Potato Boat Print Recipe Pin Recipe Prep Time 15 minutes minsCook Time 1 hour hr 10 minutes minsTotal Time 1 hour hr 25 minutes mins Course Appetizer, Dinner, Side Dish, Snack Ingredients Sweet Potato2 tbsp Sugar2 tbsp Brown Sugar2 tbsp Butter1 tsp Cinnamon¼ tsp Vanilla ExtractCandied Pecan2 cup Pecan Halves1/4 cup Brown Sugar4 tbsp Butter Instructions Preheat oven to 400℉.Place sweet potatoes on a cookie sheet and bake for 1 hour.With 20 minutes left in baking, lets make our candied pecans.Use a medium sauce pot over medium low heat. Add in butter to begin melting. Once butter is melted, pour in brown sugar stir until well combined. Add in pecans and stir to coat completely. Cook, stirring frequently for 8 minutes until toasted. Scrape onto parchment paper and let cool. Remove sweet potatoes from oven. Using a knife and spoon, carve out the inside of the potato to look like a canoe. Place potato filling in large mixing bowl. Add in brown sugar, sugar, melted butter, cinnamon, and 3/4 of candied pecans. Mix well.Stuff each potato canoe with filling. Gently top filling with remaining candied pecans. Place back into oven for 10-15 minutes just to warm.Remove from oven and enjoy!
