Cinnamon Roll Cookies
Ingredients
Cookies
- 1 Can of Refrigerated Pie Crust
- ⅛ Cup Butter melted
- ⅓ Cup Brown Sugar
- ½ Tbsp Cinnamon
- Flour for Dusting
Icing
- ½ Cup Powdered Sugar
- ¼ Tsp Vanilla Extract
- 1-2 Tbsp Milk
Instructions
- Preheat oven to 375℉ and line a large baking sheet with parchment paper.
- Combine cinnamon and sugar in a small bowl.
- Roll out pie crust on clean flat surface.
- Brush crust with melted butter followed with sprinkling of cinnamon sugar mix.
- Starting at one end, roll up crust.
- Slice rolled crust into ½ inch slices.
- On a well-floured surface, roll each pinwheel flat with a rolling pin. If a tail starts sticking out, fold tail over and continue to roll flat.
- Place cookies on baking sheet to bake for 8-12 minutes.
- Remove from the oven and allow to cool for 2 minutes.
- To make icing, stir together powdered sugar, vanilla extract, and 1 tbsp milk. If thinner consistency is desired, add another tbsp of milk.
- Pour icing over cookies and serve.
