DIY Girl Scout Samoa Cookies (Purple Box)
Ingredients
- 1 Cup Shredded Coconut sweetened or unsweetened
- 1 Cup Pitted Medjool Dates 10 dates
- ⅓ Cup Dark Chocolate
- ½ Tsp Coconut Oil
Instructions
- Preheat oven to 400℉ to toast shredded coconut. Spread on a baking sheet and place in oven for 3-5 minutes. Keep a close eye not to burn coconut. Coconut should turn golden brown then remove.
- Place coconut into a food processor with dates. Pulse until well combined and mixture starts to form a ball of dough. May need to process for 3-5 minutes.
- Line a cookie sheet with parchment paper. Scoop or roll 1 tbsp size of dough into a ball then shape into cookie by pressing and molding into form on cookie sheet.
- Use a straw or chopstick to poke a home in the middle of cookie. May need to mold cookie back into shape after removing core.
- Once finished, place cookie sheet into freezer to harden for at least 20 minutes.
- In a small bowl, combine chocolate chips and coconut oil. Place in microwave to melt for 1-2 minutes. Stir every 30 seconds until chocolate is smooth and able to be drizzled.
- Remove cookies from freezer and dip the bottom of each cookie into chocolate to give it a nice coat. Place cookies back to cookie sheet and drizzle chocolate on top.
- Place cookie back into the freezer for 10-15 minutes. Once hardened, they can be removed from parchment paper. Sit out at room temperature for a few minutes to enjoy a soft & chewy Samoa Cookie!!!
