Mini Potato Skins

Ingredients
  

  • 1 lb Baby Golden Potatoes
  • 2 Tbsp Olive Oil
  • 2 Tsp Salt
  • 2 Tsp Black Pepper
  • Cups Cheddar Cheese shredded
  • ½ Cup Bacon cooked + crumbled
  • Sour Cream
  • Cup Green Onions cut

Instructions
 

  • Preheat oven to 400℉ and line a baking sheet with aluminum foil.
  • Wash potatoes and slice each potato in half lengthwise. Place potatoes in a large bowl. Pour in olive oil, salt, pepper, and toss until evenly coated.
  • Place potatoes on baking sheet cut side up and bake for 30 minutes.
  • Remove baking sheet from oven. Sprinkle cheddar cheese over potatoes and place back into the oven for 5-7 minutes until cheese has melted.
  • Remove and top with sour cream, bacon, and green onions.
  • Enjoy!
