Place potatoes in a large bowl. Pour in olive oil, salt, pepper, and toss until evenly coated. Place potatoes on baking sheet cut side up and bake for 30 minutes. Remove baking sheet from oven. Sprinkle cheddar cheese over potatoes and place back into the oven for 5-7 minutes until cheese has melted. Remove and top with sour cream, bacon, and green onions.Enjoy!
