Pesto Pasta Salad Print Recipe Pin Recipe Prep Time 15 minutes minsCook Time 11 minutes minsTotal Time 26 minutes mins Course Appetizer, Salad, Side Dish Ingredients 1 lb Farfalle Pasta bow tie1 cup Homemade Pesto or 7-8 oz Jarred Pesto3 tbsp Lemon Juice1 tsp Kosher Salt1/2 tsp Black Pepper2 cups Spinach shredded1 1/2 cups Cherry Tomatoes halved1/2 cup Red Onion thinly sliced1/3 cup Pine Nuts for garnishParmesan shredded or grated for garnish Instructions Bring to a boil a large pot of water.While water heats, toast the pine nuts in a dry skillet over medium heat. This will take about 6-7 minutes while continuously tossing so it doesn’t burn. Transfer the pine nuts to a plate and set aside. Add 2 tbsp of salt to boiling water then add pasta and cook according to package directions for al dente pasta.Drain the pasta when finished and cool under running water. Shake off excess water, then pour pasta into a large bowl.Add lemon juice to the pesto, then add pesto to pasta. Add in spinach, tomatoes, onion, salt and pepper. Toss well to combine evenly.
