Potato Gratin Cups Print Recipe Pin Recipe Prep Time 20 minutes minsCook Time 1 hour hr 5 minutes minsTotal Time 1 hour hr 25 minutes mins Course: Appetizer, Side Dish Ingredients Method Ingredients 2½ lbs Russet Potatoes2 cups Havarti Cheese shredded ¼ lbs Muenster Cheese slices½ cup Heavy Cream2 tbsp Butter unsalted1 tsp Thyme leaves½ tsp Salt2 Cloves Garlic mincedBlack Pepper garnish Method Preheat oven to 350°F.Peel potatoes and cut both ends to make potato able to stand up. Slice potatoes into ¼inch cylinder slices and place directly in a bowl of water to soak. Over medium heat, melt butter in a medium saucepan. Use a brush to grease inside of muffin tins with melted butter. Add garlic to the remaining butter and cook for 20 seconds until fragrant. Pour in heavy cream, salt, and bring to a simmer for 30 seconds then remove from heat. Remove potatoes from water and pat dry with a paper towel. Stack 3-4 potato slices in the bottom half of each muffin tin. Drizzle 1 tsp of cream mix over stacks of potatoes. Fold Munster cheese slices into 4 squares and place 2 cheese squares on top of each stack. Place remaining potato slices in top half of muffin tins to cover cheese. Stacks should be 1-2 slices above rim of muffin tin. Drizzle remaining cream mixture over stacks and sprinkle thyme leaves evenly. Cover entire pan loosely with aluminum foil and bake for 40 minutes. Remove the pan from the oven and discard aluminum foil. Set oven to broil on low. Sprinkle Havarti cheese over each potato stack to desire. Season with some black pepper over cheese and place back into the oven for 15-20 minutes. Using oven mittens and a separate cookie sheet, drain cheese oil by slightly tilting pan towards you over the cookie sheet. Cheese oil will begin to fall on to cookie sheet. Be sure to do this slowly, tilting too fast can make potato cups fall out. If top of cheese is not golden brown, put back into the oven for 5-10 more minutes. Watch for bubbling and browning of cheese. Once color is to desire, remove from oven and repeat draining step again. Let cups cool for 5-10 minutes before removing from pan. Enjoy!
