Continuously stir until grits become thick. Stir in butter and remove from heat. Dice onion.In medium or large skillet over medium heat, add oil the butter to allow it to melt. Add in onions to and cook for 3 minutes. Then add in garlic and mix. Cook for 1-2 minutes or until fragrant. Add in shrimp and Cajun seasoning. Cook shrimp for 2-3 minutes and remove. Pour in milk, corn starch, parmesan cheese, and stir. Allow to simmer for 3 minutes then reduce heat to low. Plate grits, shrimp, then sauce in order. Enjoy!
