Salmon Alfredo Fries

Salmon Alfredo Fries

Ingredients
  

  • Vegetable Oil
  • 3 Russet Potatoes
  • Alfredo Sauce
  • Salt & Old Bay to taste
  • Grated Parmesan for garnish

Salmon

  • 1 Salmon Fillet
  • 1 tsp Crushed Red Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Cajun Seasoning

Alfredo Sauce

  • 1 cup Heavy Whipping Cream
  • 1/2 cup Parmesan Cheese freshly grated
  • 3 tbsp Butter
  • 1 clove Garlic chopped
  • Black Pepper

Instructions
 

Fries

  • Cut potatoes in to shoestring form and place in a bowl with cold water to soak.
  • Heat oil in deep fryer to 325°F.
  • Remove fries from water in batches and pat dry completely. Place dry fries in to oil to cook for 12 minutes then remove into bowl. When all fries are finished cooking, change oil temperature to 400°F.
  • Place fries back into oil to cook for a second time. This will make the fries crispy. Cook for 8-12 minutes and remove.
  • Place in a paper-towel lined bowl to drain. Salt and Old Bay fries immediately.

Salmon Alfredo

  • Rub salmon with Cajun seasoning.
  • In a large pan over medium heat, melt butter.
  • Add in salmon in middle of pan. Let cook for 2 minutes, then flip. Let cook for another 2 minutes, then begin to break salmon apart into small pieces. Remove from pan.
  • Begin to add alfredo sauce to pan. Instructions for our homemade alfredo sauce can be found here.
  • Once sauce is completed, add salmon back into pan. Mix in with sauce.
  • Pour salmon alfredo over fries. Top with some more parmesan to desire and enjoy!
