Bring a medium sized skillet to medium-low heat. Pour in a little olive oil and place salmon inside to cook.Season salmon with salt and pepper to desire.Cook salmon on both sides for 3-4 minutes each. Remove salmon from heat and mash with a fork in a bowl.Heat the day old rice in the microwave.Combine rice and salmon in a bowl. Add in soy sauce, mayonnaise, sriracha, and mix together. Scoop in salmon rice mix into the cucumbers. Cut the avocado into slices and place on top of rice mix.Sprinkle sesame seeds on top and enjoy!
