Salmon Rice Boat
Ingredients
- ½ lb Salmon Fillet
- 1 cup Cooked Rice day old
- 6 mini Cucumber
- 1 Avocado
- ¼ cup Soy Sauce
- ¼ cup Kewpie Mayonnaise
- ⅛ cup Sriracha Sauce
- Salt & Pepper to taste
- Sesame Seeds
- Extra Virgin Olive Oil
Instructions
- Using a knife and spoon, carve out the inside of the cucumbers like a canoe.
- Wash salmon and remove the the skin.
- Bring a medium sized skillet to medium-low heat. Pour in a little olive oil and place salmon inside to cook.
- Season salmon with salt and pepper to desire.
- Cook salmon on both sides for 3-4 minutes each.
- Remove salmon from heat and mash with a fork in a bowl.
- Heat the day old rice in the microwave.
- Combine rice and salmon in a bowl. Add in soy sauce, mayonnaise, sriracha, and mix together.
- Scoop in salmon rice mix into the cucumbers. Cut the avocado into slices and place on top of rice mix.
- Sprinkle sesame seeds on top and enjoy!
