Roasted Sweet Potatoes & Carrots Print Recipe Pin Recipe Prep Time 15 minutes minsCook Time 40 minutes minsTotal Time 55 minutes mins Course: Appetizer, Dinner, Side Dish Ingredients Method Ingredients 1 large Sweet Potato1 lb Carrots peeled4 cloves Minced Garlic¼ cup Olive Oil2 Tbsp Maple Syrup2 tsp Fresh Thyme chopped1 tsp Fresh Rosemary chopped1 tsp CinnamonSalt to taste Method Preheat oven to 400℉.Cut sweet potatoes and carrots into roughly 3/4-inch to 1-inch pieces. Place in a large baking dish.Add minced garlic, olive oil, maple syrup, thyme, rosemary, cinnamon, and salt to the baking dish. Toss everything together so that the veggies are well-coated in the oil, syrup, and spices.Place the baking dish in the oven for 35-40 minutes, tossing them halfway through.
