Apple Cinnamon Baked Cups
Ingredients
- ½ Cup Unsweetened Applesauce
- ½ Cup Natural Peanut Butter or Almond Butter
- 2 Large Eggs
- ¼ Cup Maple Syrup
- 1 Tsp Vanilla Extract
- 1 Cup Milk We used almond milk
- 2 Cups Old Fashioned Rolled Oats
- 1 Tsp Baking Powder
- 2 Tsp Cinnamon
- ¼ Tsp Nutmeg
- ¼ Tsp Allspice
- ¼ Tsp Salt
- 1 Medium Apple finely diced
Instructions
- Preheat oven to 350℉ and line muffin pan with muffin liners.
- In a medium-sized bowl, combine together peanut butter, applesauce, eggs, maple syrup, vanilla extract, and milk. Mix until well combined.
- Stir in dry ingredients – oats, baking powder, cinnamon, nutmeg, allspice, and salt. Stir until well combined then fold in diced apples.
- Evenly distribute batter into muffin liners and bake for 25-30 minutes until golden.
- Let cool and serve. If desired, top with more peanut butter.
