Apple Cinnamon Baked Cups

Ingredients
  

  • ½ Cup Unsweetened Applesauce
  • ½ Cup Natural Peanut Butter or Almond Butter
  • 2 Large Eggs
  • ¼ Cup Maple Syrup
  • 1 Tsp Vanilla Extract
  • 1 Cup Milk We used almond milk
  • 2 Cups Old Fashioned Rolled Oats
  • 1 Tsp Baking Powder
  • 2 Tsp Cinnamon
  • ¼ Tsp Nutmeg
  • ¼ Tsp Allspice
  • ¼ Tsp Salt
  • 1 Medium Apple finely diced

Method
 

  1. Preheat oven to 350℉ and line muffin pan with muffin liners.
  2. In a medium-sized bowl, combine together peanut butter, applesauce, eggs, maple syrup, vanilla extract, and milk. Mix until well combined.
  3. Stir in dry ingredients - oats, baking powder, cinnamon, nutmeg, allspice, and salt. Stir until well combined then fold in diced apples.
  4. Evenly distribute batter into muffin liners and bake for 25-30 minutes until golden.
  5. Let cool and serve. If desired, top with more peanut butter.
  6. Enjoy!
