Cucumber Shrimp Salad

Cucumber Shrimp Salad

Ingredients
  

  • 3 Large Cucumbers
  • 1 Lbs Shrimp tail-off, deveined
  • ½ Red Onion thinly sliced
  • ¾ Cup Sour Cream
  • 2 Tbsp Sugar
  • Tbsp Distilled White Vinegar
  • 1 Tsp Fresh Dill
  • ½ Tsp Salt

Instructions
 

  • In a large skillet, cook shrimp for 2-3 minutes with seasoning of choice. Remove from skillet and set aside to cool.
  • Thinly slice the cucumbers and red onion with a knife or mandolin.
  • In a large mixing bowl, mix together cucumbers and salt, then let stand for 30 minutes.
  • After 30 minutes, drain water from bowl and press cucumbers to expel excess water.
  • Add in red onions and shrimp.
  • In a separate bowl, combine remaining ingredients and stir to make dressing.
  • Transfer dressing to cucumber bowl and mix thoroughly.
  • Refrigerate for at least 4 hours and enjoy!
