Cucumber Shrimp Salad
Ingredients
- 3 Large Cucumbers
- 1 Lbs Shrimp tail-off, deveined
- ½ Red Onion thinly sliced
- ¾ Cup Sour Cream
- 2 Tbsp Sugar
- 1½ Tbsp Distilled White Vinegar
- 1 Tsp Fresh Dill
- ½ Tsp Salt
Instructions
- In a large skillet, cook shrimp for 2-3 minutes with seasoning of choice. Remove from skillet and set aside to cool.
- Thinly slice the cucumbers and red onion with a knife or mandolin.
- In a large mixing bowl, mix together cucumbers and salt, then let stand for 30 minutes.
- After 30 minutes, drain water from bowl and press cucumbers to expel excess water.
- Add in red onions and shrimp.
- In a separate bowl, combine remaining ingredients and stir to make dressing.
- Transfer dressing to cucumber bowl and mix thoroughly.
- Refrigerate for at least 4 hours and enjoy!
