In a large skillet, cook shrimp for 2-3 minutes with seasoning of choice. Remove from skillet and set aside to cool.
Thinly slice the cucumbers and red onion with a knife or mandolin.
In a large mixing bowl, mix together cucumbers and salt, then let stand for 30 minutes.
After 30 minutes, drain water from bowl and press cucumbers to expel excess water.
Add in red onions and shrimp.
In a separate bowl, combine remaining ingredients and stir to make dressing.
Transfer dressing to cucumber bowl and mix thoroughly.
Refrigerate for at least 4 hours and enjoy!
