In a separate large bowl, whisk together all wet ingredients including sugar and pumpkin.Pour wet ingredients into dry bowl and whisk together until smooth. Preheat griddle or pan to medium heat. Pour 1/4 cup of mix onto griddle or pan. Cook for 5-7 minutes until desire and flip. Cook for another 4-6 minutes to desire and remove.
