Lemon Potato Wedges
Ingredients
- 2½ lbs Baking Potatoes peeled + cut into eighths
- 1½ cups Chicken Broth
- ½ cup Olive Oil
- ⅛ cup Lemon Juice
- 3 cloves Garlic minced
- 1 tbsp Dried Oregano
- 1 tsp Salt
- Fresh Ground Pepper to taste
- Sprinkle of paprika optional
Instructions
- Peel potatoes and cut into thick wedges. Rinse well, drain.
- In a 13×9 inch baking dish, mix chicken broth, olive oil, lemon juice, garlic, oregano salt and pepper.
- Add potatoes and stir to coat potatoes.
- Bake, uncovered for 1½ hours at 350℉. Test with fork, and cook an additional 15 minutes if needed. For best results, allow the dish to sit for 10 minutes before serving.
