Lemon Potato Wedges

Ingredients
  

  • lbs Baking Potatoes peeled + cut into eighths
  • cups Chicken Broth
  • ½ cup Olive Oil
  • cup Lemon Juice
  • 3 cloves Garlic minced
  • 1 tbsp Dried Oregano
  • 1 tsp Salt
  • Fresh Ground Pepper to taste
  • Sprinkle of paprika optional

Instructions
 

  • Peel potatoes and cut into thick wedges. Rinse well, drain.
  • In a 13×9 inch baking dish, mix chicken broth, olive oil, lemon juice, garlic, oregano salt and pepper.
  • Add potatoes and stir to coat potatoes.
  • Bake, uncovered for 1½ hours at 350℉. Test with fork, and cook an additional 15 minutes if needed. For best results, allow the dish to sit for 10 minutes before serving.
