Peel potatoes and cut into thick wedges. Rinse well, drain.
In a 13×9 inch baking dish, mix chicken broth, olive oil, lemon juice, garlic, oregano salt and pepper.
Add potatoes and stir to coat potatoes.
Bake, uncovered for 1½ hours at 350℉. Test with fork, and cook an additional 15 minutes if needed. For best results, allow the dish to sit for 10 minutes before serving.
