Minty Watermelon Salad
Ingredients
- Spinach
- Watermelon
- Mint
- Cucumber
- Candied Pecans chopped
Vinaigrette
- ¾ cup Watermelon Chunks
- 3 tbsp White Wine Vinegar
- 3 tbsp Extra-Virgin Olive Oil
- 2 tsp Shallot minced
- 2 tsp Honey
- ½ tsp Garlic Powder
- Salt + Black Pepper to taste
Instructions
- Cut watermelon into small cubes. Slice mint and spinach into small strips. Dice cucumbers.
- Place watermelon, vinegar, oil, shallot, honey, and garlic into the bowl of a mini food processor or small blender jar. Blend on high speed until smooth, about 20 seconds. Season with salt and black pepper.
- In a large bowl, combine all items and mix well.
