Minty Watermelon Salad

Ingredients

  • Spinach
  • Watermelon
  • Mint
  • Cucumber
  • Candied Pecans chopped

Vinaigrette

  • ¾ cup Watermelon Chunks
  • 3 tbsp White Wine Vinegar
  • 3 tbsp Extra-Virgin Olive Oil
  • 2 tsp Shallot minced
  • 2 tsp Honey
  • ½ tsp Garlic Powder
  • Salt + Black Pepper to taste

Instructions

  • Cut watermelon into small cubes. Slice mint and spinach into small strips. Dice cucumbers.
  • Place watermelon, vinegar, oil, shallot, honey, and garlic into the bowl of a mini food processor or small blender jar. Blend on high speed until smooth, about 20 seconds. Season with salt and black pepper.
  • In a large bowl, combine all items and mix well.
