Minty Watermelon Salad

Ingredients
  

  • Spinach
  • Watermelon
  • Mint
  • Cucumber
  • Candied Pecans chopped
Vinaigrette
  • ¾ cup Watermelon Chunks
  • 3 tbsp White Wine Vinegar
  • 3 tbsp Extra-Virgin Olive Oil
  • 2 tsp Shallot minced
  • 2 tsp Honey
  • ½ tsp Garlic Powder
  • Salt + Black Pepper to taste

Method
 

  1. Cut watermelon into small cubes. Slice mint and spinach into small strips. Dice cucumbers.
  2. Place watermelon, vinegar, oil, shallot, honey, and garlic into the bowl of a mini food processor or small blender jar. Blend on high speed until smooth, about 20 seconds. Season with salt and black pepper.
  3. In a large bowl, combine all items and mix well.
