Parmesan Crusted Red Potatoes
Ingredients
- 1½ lbs Baby Red Potatoes halved
- ¼ cup Olive Oil
- 2 tsp Garlic minced
- 1½ tsp Salt
- ½ tsp Pepper
- 1 tsp Italian Seasoning
- ¼ cup Parmesan Cheese grated
- 2 tbsp Fresh Parsley chopped
- Cooking Spray
Instructions
- Preheat the oven to 400℉. Line a sheet pan with foil or parchment paper and coat with cooking spray.
- Cut the potatoes into half's and place in a large bowl. Add the olive oil, garlic, salt, pepper, Italian seasoning and parmesan cheese. Toss to coat.
- Spread the potatoes in a single layer on the prepared baking sheet cut face down. Bake for 35-40 minutes or until golden brown and fork tender. Sprinkle with parsley and serve.
