Parmesan Crusted Red Potatoes

Ingredients
  

  • lbs Baby Red Potatoes halved
  • ¼ cup Olive Oil
  • 2 tsp Garlic minced
  • tsp Salt
  • ½ tsp Pepper
  • 1 tsp Italian Seasoning
  • ¼ cup Parmesan Cheese grated
  • 2 tbsp Fresh Parsley chopped
  • Cooking Spray

Instructions
 

  • Preheat the oven to 400℉. Line a sheet pan with foil or parchment paper and coat with cooking spray.
  • Cut the potatoes into half's and place in a large bowl. Add the olive oil, garlic, salt, pepper, Italian seasoning and parmesan cheese. Toss to coat.
  • Spread the potatoes in a single layer on the prepared baking sheet cut face down. Bake for 35-40 minutes or until golden brown and fork tender. Sprinkle with parsley and serve.
