Preheat the oven to 400℉. Line a sheet pan with foil or parchment paper and coat with cooking spray.
Cut the potatoes into half's and place in a large bowl. Add the olive oil, garlic, salt, pepper, Italian seasoning and parmesan cheese. Toss to coat.
Spread the potatoes in a single layer on the prepared baking sheet cut face down. Bake for 35-40 minutes or until golden brown and fork tender. Sprinkle with parsley and serve.
