Pastel de Jaiba (Chilean Crab Dish)
Ingredients
- 1 Yellow Onion
- 1 Tbsp Olive Oil
- 2 Cloves Garlic minced
- ½ Tsp Paprika
- ¼ Tsp Cumin
- 450 g Lump Crab Meat
- ½ Cup White Wine sauvignon blanc
- 1¼ Cups Soft Bread we used white bread
- ½-1 Cup Milk to soak the bread
- ½ Cup Heavy Cream
- 2 Tbsp Breadcrumbs
- 1 Cup Parmesan
Instructions
- Preheat oven to 400℉.
- In a bowl, tear apart or cut bread and soak in the milk. Use a fork to mash into a paste.
- Heat a large oven-safe skillet to medium-high heat and add oil and onions. Cook onions until golden brown then add garlic, paprika, cumin, salt & pepper. Cook for 1-2 minutes until fragrant.
- Add in crab meat with white wine and cook until wine has evaporated. Lower heat to medium and add in soaked bread.
- Mix in well heavy cream and 3/4 Parmesan. Allow to thicken if desired. Transfer to baking dish or keep in oven-safe skillet. Sprinkle breadcrumbs and remaining Parmesan.
- Bake for 20 minutes until golden and serve.
