In a bowl, tear apart or cut bread and soak in the milk. Use a fork to mash into a paste.
Heat a large oven-safe skillet to medium-high heat and add oil and onions. Cook onions until golden brown then add garlic, paprika, cumin, salt & pepper. Cook for 1-2 minutes until fragrant.
Add in crab meat with white wine and cook until wine has evaporated. Lower heat to medium and add in soaked bread.
Mix in well heavy cream and 3/4 Parmesan. Allow to thicken if desired. Transfer to baking dish or keep in oven-safe skillet. Sprinkle breadcrumbs and remaining Parmesan.
