Rosemary Balsamic Glazed Lamb Chops
Ingredients
Lamb Chops
- 4 Lamb Chops
- 1-2 Sprig Rosemary
- 3 Tbsp Butter unsalted
- 2 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Black Pepper
- 1 Tbsp Kosher Salt coarse
Balsamic Glaze Reduction
- ½ Cup Balsamic Vinegar
- 3 Tbsp Brown Sugar
- 1 Tbsp Garlic minced
- ½ Tsp Kosher Salt coarse
- ¼ Tsp Black Pepper
Instructions
Balsamic Glaze Reduction
- In a medium saucepan, bring to a boil the vinegar, brown sugar, pepper, and salt.
- Once boiling, reduce heat to medium and let simmer while stirring occasionally.
- Glaze will begin to thicken as it simmers. While stirring, you will notice the glaze will begin sticking to back of a spoon.
- Once vinegar has reduced, remove from heat to let cool.
Lamb Chops
- Preheat oven to broil.
- Add room temperature lamb chops to a bowl or storage bag with black pepper, salt, minced garlic, and olive oil.
- Massage chops thoroughly with seasonings and let sit for a few minutes.
- Heat a large cast-iron-skillet to medium-high. Add in butter followed by rosemary and cook for 1 minute.
- Place in the chops to sear for 2-3 minutes on each side.
- After searing, place cast-iron-skillet in oven on top rack to broil for 2-3 minutes on each side.
- After broiling, remove chops from oven to rest.
- Drizzle balsamic glaze over chops and enjoy!
