Instructions
Balsamic Glaze Reduction
In a medium saucepan, bring to a boil the vinegar, brown sugar, pepper, and salt.
Once boiling, reduce heat to medium and let simmer while stirring occasionally.
Glaze will begin to thicken as it simmers. While stirring, you will notice the glaze will begin sticking to back of a spoon.
Once vinegar has reduced, remove from heat to let cool.
Lamb Chops
Preheat oven to broil.
Add room temperature lamb chops to a bowl or storage bag with black pepper, salt, minced garlic, and olive oil.
Massage chops thoroughly with seasonings and let sit for a few minutes.
Heat a large cast-iron-skillet to medium-high. Add in butter followed by rosemary and cook for 1 minute.
Place in the chops to sear for 2-3 minutes on each side.
After searing, place cast-iron-skillet in oven on top rack to broil for 2-3 minutes on each side.
After broiling, remove chops from oven to rest.
Drizzle balsamic glaze over chops and enjoy!
