Rosemary Balsamic Glazed Lamb Chops

Ingredients
  

Lamb Chops

  • 4 Lamb Chops
  • 1-2 Sprig Rosemary
  • 3 Tbsp Butter unsalted
  • 2 Tbsp Extra Virgin Olive Oil
  • 1 Tbsp Black Pepper
  • 1 Tbsp Kosher Salt coarse

Balsamic Glaze Reduction

  • ½ Cup Balsamic Vinegar
  • 3 Tbsp Brown Sugar
  • 1 Tbsp Garlic minced
  • ½ Tsp Kosher Salt coarse
  • ¼ Tsp Black Pepper

Balsamic Glaze Reduction

  • In a medium saucepan, bring to a boil the vinegar, brown sugar, pepper, and salt.
  • Once boiling, reduce heat to medium and let simmer while stirring occasionally.
  • Glaze will begin to thicken as it simmers. While stirring, you will notice the glaze will begin sticking to back of a spoon.
  • Once vinegar has reduced, remove from heat to let cool.

Lamb Chops

  • Preheat oven to broil.
  • Add room temperature lamb chops to a bowl or storage bag with black pepper, salt, minced garlic, and olive oil.
  • Massage chops thoroughly with seasonings and let sit for a few minutes.
  • Heat a large cast-iron-skillet to medium-high. Add in butter followed by rosemary and cook for 1 minute.
  • Place in the chops to sear for 2-3 minutes on each side.
  • After searing, place cast-iron-skillet in oven on top rack to broil for 2-3 minutes on each side.
  • After broiling, remove chops from oven to rest.
  • Drizzle balsamic glaze over chops and enjoy!
