Vegan Chocolate Chunk Pancakes
Ingredients
- 2 Ripe Bananas
- 1½ cup All-Purpose Flour
- 1¼ cup Almond Milk
- 3 oz Dark Chocolate
- 2 tbsp Sugar
- 1 tbsp Baking Powder
- 1 tbsp Dark Cocoa Powder
- 1 tsp Vanilla Extract
- ½ tsp Salt
Instructions
- In a large mixing bowl, whisk together all dry ingredients minus dark chocolate.
- In another large mixing bowl, place peeled bananas and mash with a fork. Pour in almond milk, vanilla extract, and mix together.
- Add dry mix to wet bowl and whisk until combined. Chop chocolate into small pieces and add into the mix. Whisk for 1 minute until well combined.
- Heat griddle or pan to medium low heat and spray nonstick cooking spray if desired. Pour ½ cup of mix onto hot surface. Let cook for 4-6 minutes and when bubbles begin to disappear, flip.
- Cook for another 4-6 minutes then remove from heat.
- Add your desired toppings and syrup.
