In a large mixing bowl, whisk together all dry ingredients minus dark chocolate.
In another large mixing bowl, place peeled bananas and mash with a fork. Pour in almond milk, vanilla extract, and mix together.
Add dry mix to wet bowl and whisk until combined. Chop chocolate into small pieces and add into the mix. Whisk for 1 minute until well combined.
Heat griddle or pan to medium low heat and spray nonstick cooking spray if desired. Pour ½ cup of mix onto hot surface. Let cook for 4-6 minutes and when bubbles begin to disappear, flip.
Cook for another 4-6 minutes then remove from heat.
