Vegan Chocolate Chunk Pancakes

Ingredients
  

  • 2 Ripe Bananas
  • cup All-Purpose Flour
  • cup Almond Milk
  • 3 oz Dark Chocolate
  • 2 tbsp Sugar
  • 1 tbsp Baking Powder
  • 1 tbsp Dark Cocoa Powder
  • 1 tsp Vanilla Extract
  • ½ tsp Salt

Instructions
 

  • In a large mixing bowl, whisk together all dry ingredients minus dark chocolate.
  • In another large mixing bowl, place peeled bananas and mash with a fork. Pour in almond milk, vanilla extract, and mix together.
  • Add dry mix to wet bowl and whisk until combined. Chop chocolate into small pieces and add into the mix. Whisk for 1 minute until well combined.
  • Heat griddle or pan to medium low heat and spray nonstick cooking spray if desired. Pour ½ cup of mix onto hot surface. Let cook for 4-6 minutes and when bubbles begin to disappear, flip.
  • Cook for another 4-6 minutes then remove from heat.
  • Add your desired toppings and syrup.
  • Enjoy!
