White Cheddar Chicken Pasta
Ingredients
Chicken
- 1-2 lbs Chicken Tenderloins diced
- 1½ Tbsp Olive Oil
- 1 Tsp Dry Mustard
- ½ Tsp Thyme dried
- ½ Tsp Oregano dried
- Salt + Pepper to Taste
Sauce
- 1 lb Rironi Pasta
- 2 Tbsp Butter
- 2 Tbsp All-Purpose Flour
- 2 Cloves Garlic minced
- 1 Yellow Onion diced
- 2 Cups Milk
- ¼ Cup White Wine Vinegar
- 1 Tbsp Dijon Mustard
- 8 Oz White Cheddar Cheese shredded or grated
- 1 Tsp Crushed Red Pepper Flakes
- Salt + Pepper to Taste
Instructions
- Bring a large pot of salted water to a boil.
- Dice chicken and season with seasonings. In a large skillet over medium heat, heat olive oil and cook chicken for a few minutes until done and set aside on a plate.
- Cook rotini pasta according to package directions until al dente.
- In the chicken skillet, melt butter and add in flour. Mix together and add white wine vinegar, garlic, onions, and Dijon mustard. Mix well for 3-5 minutes until onions are soft.
- Slowly pour in milk and stir after each addition. Stir in cheddar cheese until melted. Add in chicken and red pepper flakes. Combine everything well and serve.
