White Cheddar Chicken Pasta

Ingredients
  

Chicken

  • 1-2 lbs Chicken Tenderloins diced
  • Tbsp Olive Oil
  • 1 Tsp Dry Mustard
  • ½ Tsp Thyme dried
  • ½ Tsp Oregano dried
  • Salt + Pepper to Taste

Sauce

  • 1 lb Rironi Pasta
  • 2 Tbsp Butter
  • 2 Tbsp All-Purpose Flour
  • 2 Cloves Garlic minced
  • 1 Yellow Onion diced
  • 2 Cups Milk
  • ¼ Cup White Wine Vinegar
  • 1 Tbsp Dijon Mustard
  • 8 Oz White Cheddar Cheese shredded or grated
  • 1 Tsp Crushed Red Pepper Flakes
  • Salt + Pepper to Taste

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Dice chicken and season with seasonings. In a large skillet over medium heat, heat olive oil and cook chicken for a few minutes until done and set aside on a plate.
  • Cook rotini pasta according to package directions until al dente.
  • In the chicken skillet, melt butter and add in flour. Mix together and add white wine vinegar, garlic, onions, and Dijon mustard. Mix well for 3-5 minutes until onions are soft.
  • Slowly pour in milk and stir after each addition. Stir in cheddar cheese until melted. Add in chicken and red pepper flakes. Combine everything well and serve.
