Method
- Boil pasta according to package directions in salted water. Cook until al dente and drain.
- In a large skillet, melt butter and sauté onion and garlic over medium heat until soft.
- Whisk in chicken broth, heavy cream, sour cream, pumpkin purée, and seasonings.
- Simmer sauce for 10 minutes stirring occasionally.
- Stir in cooked pasta and allow to simmer for 2-3 minutes.
- Garnish with Parmesan and parsley.
