Creamy Pumpkin Pasta

Ingredients
  

  • 8 Oz Gemelli Pasta
  • ¼ White Onion chopped
  • 1 Clove Garlic minced
  • 1 Tbsp Butter
  • 1 Cup Pumpkin Purée
  • 1 Cup Chicken Broth
  • Cup Heavy Cream
  • ¼ Cup Sour Cream
  • Pinch Of Nutmeg
  • ½ Tsp Salt
  • ½ Tsp Black Pepper
  • 1 Tbsp Parsley chopped
  • ¼ Cup Parmesan shredded

Instructions
 

  • Boil pasta according to package directions in salted water. Cook until al dente and drain.
  • In a large skillet, melt butter and sauté onion and garlic over medium heat until soft.
  • Whisk in chicken broth, heavy cream, sour cream, pumpkin purée, and seasonings.
  • Simmer sauce for 10 minutes stirring occasionally.
  • Stir in cooked pasta and allow to simmer for 2-3 minutes.
  • Garnish with Parmesan and parsley.
  • Enjoy!
