Method
- Preheat oven to 400℉.
- Using a sharp knife, slice the tops of the Brussels Sprouts to make a flat edge.
- Carefully using a mandolin, slice the Brussels Sprouts 3/16" thick. Throw away stems.
- In a large bowl, combine shaved Brussels Sprouts, olive oil, salt + pepper, and garlic. Using your hands or tongs, toss to mix well evenly.
- On a large baking sheet, layer Brussels Sprouts and bake for 16-18 minutes. At 7 minutes, remove from oven and toss with tongs.
- Top with balsamic glaze if desired.
