Preheat oven to 450℉ and line a large baking sheet with aluminum foil.
Wash and cut sweet potatoes into quarters.
In a medium sized bowl, beat eggs with whisk.
In a large ziploc bag, mix together Parmesan, salt, pepper, garlic powder, parsley, oregano, and paprika.
Dip each potato into egg wash and completely cover. Then drop into dry mix bag and shake until completely coated. Shake off excess mix and place on baking sheet.
Arrange potatoes in a single layer and bake for 20 minutes or until golden brown. Remove from oven and serve.
