Cook the stir-fry noodles according to package instructions and set aside.
In a medium-sized bowl, whisk together the Hoisin sauce, sesame oil, soy sauces, rice vinegar, water, and set aside
Heat a large frying pan or wok over medium-high heat, spray with cooking oil spray add in sliced chicken with a little pinch of salt and pepper, garlic and ginger. Cook until lightly browned, remove, and set aside.
Add the vegetables and stir fry for a couple of minutes.
Add back in the chicken, noodles, and sauce while continuing to stir fry everything together for a 2-3 minutes until everything is well coated in the sauce.
Sprinkle with the sliced green onions and serve.
