Hoisin Chicken & Noodles

Ingredients
  

  • 200 g Hokkien Stir-Fry Noodles
  • 6 tbsp Hoisin Sauce
  • 1 tsp Sesame Oil
  • 1 tbsp Soy Sauce
  • 1 tbsp Dark Soy Sauce
  • ¼ cup Water
  • 1 tbsp Rice Vinegar
  • Salt and Pepper
  • ¾ lb Chicken Tenderloins sliced into thin strips
  • 3 cloves Garlic minced
  • 1 tbsp Fresh Ginger grated
  • ¾ cup Red Sweet Pepper sliced into thin strips
  • ¾ cup Zucchini sliced into thin strips
  • ½ cup Carrots sliced into thin strips
  • ½ cup Napa Cabbage shredded
  • Green Onions sliced
  • Cooking Oil Spray we used avocado oil

Instructions
 

  • Cook the stir-fry noodles according to package instructions and set aside.
  • In a medium-sized bowl, whisk together the Hoisin sauce, sesame oil, soy sauces, rice vinegar, water, and set aside
  • Heat a large frying pan or wok over medium-high heat, spray with cooking oil spray add in sliced chicken with a little pinch of salt and pepper, garlic and ginger. Cook until lightly browned, remove, and set aside.
  • Add the vegetables and stir fry for a couple of minutes.
  • Add back in the chicken, noodles, and sauce while continuing to stir fry everything together for a 2-3 minutes until everything is well coated in the sauce.
  • Sprinkle with the sliced green onions and serve.
