Pahut (Cambodian Fish Cakes)

Ingredients
  

  • 1 lb White Fish Fillet we used Cod
  • 3 cloves Minced Garlic
  • 3 Scallions chopped
  • 4 tbsp Lemongrass chopped or paste
  • 2 tbsp Fish Sauce
  • 1 tsp Sugar
  • ΒΌ tsp Black Pepper
  • 2 Hot Red Peppers chopped or more to taste
  • 1 teaspoon Prahok (Fish Paste) we used anchovy paste
  • 1 cup Vegetable Oil

Method
 

  1. In a food processor, mix fish, garlic, and scallions.
  2. Add the lemongrass, fish sauce, sugar, black pepper, chili, prahok, and 1 tablespoon oil to this mixture.
  3. Take about a tablespoon of mix and form a small patty and repeat this process.
  4. Place the patties on a sheet of parchment paper.
  5. Heat a frying pan or wok over medium-high heat.
  6. When the pan is hot, add the remaining oil and fry the fish patties until they are cooked and browned on both sides.
  7. Serve with steamed white rice or as an appetizer.
