Pahut (Cambodian Fish Cakes)

Ingredients
  

  • 1 lb White Fish Fillet we used Cod
  • 3 cloves Minced Garlic
  • 3 Scallions chopped
  • 4 tbsp Lemongrass chopped or paste
  • 2 tbsp Fish Sauce
  • 1 tsp Sugar
  • ΒΌ tsp Black Pepper
  • 2 Hot Red Peppers chopped or more to taste
  • 1 teaspoon Prahok (Fish Paste) we used anchovy paste
  • 1 cup Vegetable Oil

Instructions
 

  • In a food processor, mix fish, garlic, and scallions.
  • Add the lemongrass, fish sauce, sugar, black pepper, chili, prahok, and 1 tablespoon oil to this mixture.
  • Take about a tablespoon of mix and form a small patty and repeat this process.
  • Place the patties on a sheet of parchment paper.
  • Heat a frying pan or wok over medium-high heat.
  • When the pan is hot, add the remaining oil and fry the fish patties until they are cooked and browned on both sides.
  • Serve with steamed white rice or as an appetizer.
