Method
- Beat butter and sugar at medium speed.
- Add corn syrup and egg yolks, then mix.
- Stir in the flour until smooth. Cover and Chill for 1 hour.
Make Filling
- Melt Butter in heavy saucepan over medium heat, stir in powdered sugar and dark corn syrup.
- Heat until mix boils, stirring often.
- Remove from heat and stir in pecans. Let sit for 30 minutes.
- After sitting, shape filling into 1/4 inch balls, set aside.
Back to Cookies
- Preheat over to 350°.
- Shape cookies into 2 inch balls and place onto baking sheet.
- Beat egg whites until foamy. Brush over dough.
- Bake for 6 minutes then remove from oven.
- Place filling ball in center of each cookie. Press filling firmly into cookie.
- Bake for 8-10 more minutes and enjoy!
