Instructions
Beat butter and sugar at medium speed.
Add corn syrup and egg yolks, then mix.
Stir in the flour until smooth. Cover and Chill for 1 hour.
Make Filling
Melt Butter in heavy saucepan over medium heat, stir in powdered sugar and dark corn syrup.
Heat until mix boils, stirring often.
Remove from heat and stir in pecans. Let sit for 30 minutes.
After sitting, shape filling into 1/4 inch balls, set aside.
Back to Cookies
Preheat over to 350°.
Shape cookies into 2 inch balls and place onto baking sheet.
Beat egg whites until foamy. Brush over dough.
Bake for 6 minutes then remove from oven.
Place filling ball in center of each cookie. Press filling firmly into cookie.
Bake for 8-10 more minutes and enjoy!
