Pecan Pie Cookies

Ingredients
  

  • 1 cup Butter soft
  • 1/2 cup Sugar
  • 1/2 cup Dark Corn Syrup
  • 2 Eggs separated
  • 2 1/2 cup All Purpose Flour

Filling

  • 3/4 cup Pecans finely chopped
  • 1/4 cup Butter
  • 1/2 cup Powdered Sugar
  • 3 tbsp Dark Corn Syrup

Instructions
 

  • Beat butter and sugar at medium speed.
  • Add corn syrup and egg yolks, then mix.
  • Stir in the flour until smooth. Cover and Chill for 1 hour.

Make Filling

  • Melt Butter in heavy saucepan over medium heat, stir in powdered sugar and dark corn syrup.
  • Heat until mix boils, stirring often.
  • Remove from heat and stir in pecans. Let sit for 30 minutes.
  • After sitting, shape filling into 1/4 inch balls, set aside.

Back to Cookies

  • Preheat over to 350°.
  • Shape cookies into 2 inch balls and place onto baking sheet.
  • Beat egg whites until foamy. Brush over dough.
  • Bake for 6 minutes then remove from oven.
  • Place filling ball in center of each cookie. Press filling firmly into cookie.
  • Bake for 8-10 more minutes and enjoy!
