Pumpkin Spice Oatmeal Cream Pies

Ingredients
  

Cookie
  • 2 Cups Oat Flour
  • 1 Tsp Baking Soda
  • ½ Tsp Salt
  • 1 Tsp Pumpkin Pie Spice
  • ½ Cup Pumpkin Purée
  • ½ Cup Butter
  • ½ Cup Sugar
  • 1 Cup Brown Sugar
  • 1 Tsp Vanilla Extract
  • 2 Cups Old Fashion Rolled Oats
Filling
  • ½ Cup Butter Softened
  • 2 Cups Powdered Sugar
  • 2 Tsp Pumpkin Pie Spice
  • 1-3 Tsp Milk start with 1 tsp, then add more for thinner consistency

Method
 

  1. Preheat oven to 350℉.
  2. In a medium mixing bowl, combine oat flour, baking soda, salt, and pumpkin pie spice. In a separate large bowl, mix together pumpkin purée, butter, sugar, brown sugar, and vanilla extract.
  3. Add the dry mix to wet mix and combine. Fold in oats thoroughly.
  4. On a lined baking sheet, scoop dough (2 tbsp each) and flatten slightly with your fingers or the bottom of a bowl.
  5. Cookies will bake for 9-11 minutes. Remove from heat and set aside to cool.
  6. To make the filling, add softened butter to a large mixing bowl. Beat for 2-3 minutes until smooth. Add in powdered sugar, pumpkin pie spice, and mix well. Add milk if necessary starting with 1 tsp.
  7. To assemble, spread or pipe filling on the bottom of one cookie and top with another.
  8. Enjoy!
