Spicy Gochujang Noodles

Ingredients
  

  • 12 oz Rice Noodles or Noodles of Choice
  • ¼ cup Soy Sauce
  • ¼ cup Gochujang Paste
  • 2 tbsp Coconut Cream
  • 1 tbsp Tomato paste
  • 2 tbsp Water
  • 2 tbsp Honey
  • 1 tbsp Toasted Sesame Oil
  • 1 tbsp Rice Vinegar
  • 2 tsp Minced Garlic
  • 1 tsp Fresh Grated Ginger
  • ½ tsp Red Pepper Flakes more or less
  • Sesame Seeds for garnish
  • Scallions for garnish

Method
 

  1. Bring a large pot of salted water to a boil and cook noodles according to package instructions.
  2. Meanwhile, whisk together all other ingredients in a bowl and set aside. There may be some chunks of coconut cream, but it will melt once combined with the noodles.
  3. When the noodles are done, drain and rinse and add back to the pot. Add in about half of the sauce and toss to combine.
  4. Serve with chopped scallions, sesame seeds and red pepper flakes.
  5. Enjoy!
