In large mixing bowl, place wings along with salt, pepper, olive oil, and mix with hands. Make sure to mix well by covering all wings in mix.
Use a large cookie sheet lined with aluminum foil and place a cooling rack overtop of it to allow chicken wings to drain. Aline wings in 3 rows on rack and place in oven to bake for 22 minutes.
Combine all the dry rub ingredients in a bowl and whisk until completely mixed. Sprinkle a generous amount of the dry rub on both sides of the wings. You can use your fingers to do this or an old shaker.
Remove wings from oven and use tongs to flip wings over to allow other side to cook. Place back into oven for 22 more minutes or until the wings are crispy and nicely caramelized.
Remove wings from oven and let cool. If you desire crispier wings, flip again and place it in the oven for 10-15 more minutes. You can sprinkle some more rub if desired.
