Cook Bucatini pasta according to package instructions in a large pot.
Slice bacon into narrow strips, horizontally.
Using a large frying pan, set to medium heat and place in sliced bacon when heat turns on and add in a small amount of olive oil.
The bacon will begin to simmer and crisp up.
In a large mixing bowl, whisk together eggs thoroughly.
Pour in Pecorino cheese and lots of black pepper, to desire. Mix eggs, cheese, and black pepper until well combined. This is your cream mixture.
Once Bucatini is cooked al dente, add pasta to frying pan with turkey bacon and scoop in a ladle of pasta water.
Turn heat off of frying pan to stop the pasta and bacon from cooking further.
Add cream mixture to your frying pan and toss pasta into the sauce, using tongs.
To thin sauce out, add one ladle of pasta water at a time between tossing.
Plate and top with more Pecorino and black pepper.
