Turkey Bacon Carbonara

Ingredients
  

  • 12 oz Bucatini Pasta
  • 4 Large Eggs
  • 3 slices of Turkey Bacon thick cut
  • 1 cup Pecorino Cheese grated
  • Extra Virgin Olive Oil
  • Black Pepper

Instructions
 

  • Cook Bucatini pasta according to package instructions in a large pot.
  • Slice bacon into narrow strips, horizontally.
  • Using a large frying pan, set to medium heat and place in sliced bacon when heat turns on and add in a small amount of olive oil.
  • The bacon will begin to simmer and crisp up.
  • In a large mixing bowl, whisk together eggs thoroughly.
  • Pour in Pecorino cheese and lots of black pepper, to desire. Mix eggs, cheese, and black pepper until well combined. This is your cream mixture.
  • Once Bucatini is cooked al dente, add pasta to frying pan with turkey bacon and scoop in a ladle of pasta water.
  • Turn heat off of frying pan to stop the pasta and bacon from cooking further.
  • Add cream mixture to your frying pan and toss pasta into the sauce, using tongs.
  • To thin sauce out, add one ladle of pasta water at a time between tossing.
  • Plate and top with more Pecorino and black pepper.
  • Enjoy!
